Mojo Sauce Potatoes

(Best of Vegetarian Times)

Put the 8 cups water and 1-2 teaspoons salt into a 6-quart stockpot and bring to a boil. Add potatoes and let water return to a boil, then reduce to medium heat and simmer for 15 minutes or until potatoes are tender.

While potatoes are cooking, whisk the vinegar, oil, and 1 Tablespoon water together in a small bowl. Then whisk in the remaining ingredients.

Pour this sauce over the drained potatoes and toss gently to coat. Serve hot or warm.
