1 ripe papaya, peeled, seeded, and roughly chopped (You could also try cantaloupes, peaches, mangoes, pineapples, kiwis, or any other fruit with which you'd like to experiment.)
1 small red bell pepper, sliced into short, thin slices
1 small red onion, sliced into long, thin slices
1/2 cup chopped fresh cilantro
1 clove garlic, minced
1/4 cup pineapple juice
6 Tablespoons lime juice (about 3 limes)
1 jalapeño pepper, finely chopped
salt and freshly cracked black pepper to taste
Mix ingredients together well. This salsa will keep, refrigerated, for 3 to 4 days.
