(Still Life with Menu)
Preheat oven to 350°.
Cream margarine and sugars together with an electric mixer on high speed setting. Beat in the egg or egg substitute, and stir in the vanilla and peppermint extracts. Combine the flour, cocoa, baking soda and salt, then stir in the sugar/margarine mixture and the chocolate chips, and mix together thoroughly.
Plop rounded teaspoons of batter onto a lightly greased cookie sheet. Bake 12 to 15 minutes. Remove from sheet immediately after baking and cool on a rack.
